Did You Know? The Culinary Institute of America (CIA) Adopts Master A

One of the world’s top three culinary schools, the Culinary Institute of America (CIA), with a proud 70-year history, has adopted Master A as a tool to evaluate the pure aroma and flavor of coffee beans.

In April 2016, the CIA’s New York campus partnered with the Coffee Critics Association (CCA) to launch the Flavor Master Certificate (FMC) program. This marks the first time in the school’s history that an official certification course has been co-developed with an international organization.

CIA Professor David Kamen noted that the FMC program offers valuable education not only for chefs, but also for sommeliers, baristas, bakers, and pastry chefs—any professional working in the flavor and food industry.
